Absolute BEST Pancakes & Syrup

I have made this breakfast for several people now and everyone keeps asking for the recipe . . .
Here is a basic outline - you will have to adjust based on your preferences
Best Ever Pancakes
This will make about 4-6 decent sized pancakes - recipe is easily multiplied.
1 Cup bread flour (you can use all purpose but the bread flour makes them fluffier)
1 to 2 tablespoons baking powder (yes, Tablespoons . . . the more the fluffier)
2 tablespoon sugar
1/2 to 1 teaspoon cinnamon
Combine all the ingredients and whisk well. Its important to make sure all of the baking powder is incorporated.
In a separate bowl mix :
1/2 cup of milk
1/2 cup of yogurt (I like using strawberry - gives a hint of flavor)
1 egg
1 to 2 teaspoons vanilla
2 tablespoons vegetable oil
Mix well then add to the flour mixture . . . then get cookin!
Homemade Blueberry Syrup
1 cup frozen blueberries
1/3 to 1/2 cup corn syrup
2 or so tablespoons sugar
splash of lemon juice
1 tablespoon of flour
1/4 to 1/2 cup of water
In a sauce pan - combine blueberries, corn syrup, sugar, and lemon juice. On low heat, mix ingredients well. Make sure sugar dissolves.
Let this keep cooking on low and move on to:
Mix flour and water together to make a slurry. This should be rather runny - you will be adding this once the syrup is done cooking (to thicken it up).
Bring syrup to a simmer - be sure to stir fairly often and use a fork to squish some of the blueberries. Let simmer for about 3-5 minutes then remove from heat. Syrup will be runny at this point. Add the flour slurry slowly and mix well until you have your desired consistency. Serve pancakes warm with fresh, roasted to order coffee for a great breakfast.
